We have created this gluten-restricted breakfast by taking two hollowed out baked potato skins and filling them with our Mexican eggs and bean mixture containing black beans, diced green chilies, pinto beans, diced red and green peppers, diced onions and scrambled eggs and shredded cheddar cheese. A dried fruit packet is also included. Please remove packet before heating.
