Vegetable Chili Mac & Cheese Bowl – We first prepare our vegetarian chili. Loaded with tons of vegetables including diced tomatoes, corn, carrots, celery, onions, green peppers, three different kinds of beans: black beans, garbanzo beans and pinto beans all simmer in a flavorful slightly spicy broth until thick. Wonderful all by itself, but we have stepped it up a notch and added our ever-popular macaroni and cheese to create another remarkable pasta bowl. We finish this new hearty vegetarian pasta bowl with tender peas and garnish with a hearty portion of shredded cheddar cheese.
