• Broccoli, packed with vitamins, can be made into rice, eaten alone, or added to soups and stews.
• Sweet Potatoes have potassium and Vitamin A. These may be baked, roasted, or air fried.
• Brussel Sprouts are filled with fiber and Vitamin A. These may be steamed, roasted, or pan-fried.
• Cauliflower is the new pizza crust. Top this with hummus, roasted red peppers, and arugula.
