Thanksgiving is just around the corner, so we thought we’d share a delicious and easy to make pumpkin pie recipe.  Enjoy!

1 1/4 cups pumpkin puree, canned or fresh
1/2 cup white sugar
1/4 cup brown sugar
1/4 teaspoon salt
1/4 teaspoon ground ginger
1 1/4 teaspoon ground cinnamon
1 teaspoon flour
2 eggs
1 cup evaporated milk
2 tablespoons water
1/4 teaspoon vanilla extract
1 unbaked pastry shell (9-inch)
whipped cream

Combine pumpkin, white sugar, brown sugar, salt, ginger, cinnamon and flour in a mixing bowl. Add eggs; mix well. Add evaporated milk, water, and vanilla; mix well. Pour into pastry-lined pie pan. Bake at 400° for 15 minutes. Reduce temperature to 350 degrees and bake for 35 to 45 minutes or until a knife inserted near the center comes out clean. The center may still wiggle a little but will firm up out of the oven. Let cool on a metal rack.  Garnish with whipped cream.

Caution, will be hot.
