Cooked shredded beef steak seasoned with jalapenos, Mexican spices adding shredded cheddar cheese, shredded Monterey jack cheese, tomato paste and enchilada sauce. All of this is then rolled up in a whole wheat tortilla and lightly fried to a golden brown. We add diced sweet potatoes and scrambled eggs to polish off this new Mexican breakfast entrée.
