National Baking Month: Scones

A scone is a baked good, usually made of either wheat or oatmeal with baking powder as a leavening agent and baked on sheet pans. A scone is often lightly sweetened and occasionally glazed with egg wash. The scone is a basic component of the cream tea. Wikipedia

Living in Twin Falls, Idaho the definition of “scones” is quite different than this. Most people in our area would say a scone is what you get at our local county fair, which consists of sweet bread dough stretched like a pizza crust and deep-fried dripping in honey butter. Delicious but one bite is enough for me. I have always been health conscience when cooking for my family and helping plan menu items for HSD so the fried dough version has never been my favorite.

We have created a wonderful, healthier version of our favorite family scone recipe for our fall-winter menu. The lemon poppy seed scone a family favorite has become an all-staff and now a member favorite! We love it here in the office when our production department is baking them, you can smell them all throughout the building. If you haven’t tried this entrée, you really should! Would love to get your feedback!
